    Sun, Fun, and The Perfect Food and Wine Summer Pairing

    Imagine kicking back with friends in your backyard oasis, sharing stories and laughs with a crisp glass of Sauvignon Blanc to your lips. 


    You take in the flavors of tropical papaya, guava and mango while the taste of pan-seared trout baked to perfection alongside a compote of fresh dill, olives, and sweet orange zest enlightens your senses.


    It’s literally the taste of summer. 


    We teamed up with the Chef and Owner of Fernie Catering Co—Chef Barrie—who created a stunning dish that’s easy for you to make at home and it makes the perfect food and white wine pairing this summer. In fact we discovered that it pairs perfectly with our 2019
    Sauvignon Blanc.


    Pan-seared Steelhead Trout with Cerignola Green Olive, Orange and Hazelnut

    Fresh tomato, tropical papaya, and mango turn this fresh fish dish into a masterclass, flavorful experience that’s sure to be appreciated by all.

    Ingredients:

    • 4-5oz Portions of trout
    • 130g Green olive (sliced)
    • 50g Capers
    • 25g Orange zest
    • 80ml Orange juice
    • 30g Dill
    • 60g Parsley
    • 15g Garlic
    • 80ml Olive oil
    • ½ teaspoon Black pepper
    • ½ teaspoon Salt

    Cooking Directions

    Preparation

    1. Slice olives and garlic. Julianne parsley. Chop dill. Rinse capers. 
    2. Zest and juice orange. Add remaining ingredients into a bowl and toss.

    Trout

    1. Heat cast-iron skillet to medium with canola oil. Place seasoned trout skin side down for 3 minutes. Add butter to the top of the portions and bake at 350°F for 5-8 minutes.

    Smile, serve, and enjoy.

    Barrie has always had a love for the diverse restaurant and catering industry. After attaining her Red Seal Chef Certification in Culinary Arts, she competed (and won her episode) on the popular national Food Network TV show "Chopped Canada". This enabled Barrie to launch her dreams of starting her own business. 


    She now runs a successful catering company out of beautiful Fernie, BC focusing specially on delicious pre-made meals sourced from local ingredients that are now available at select locations throughout BC.
