Tasting Notes:
On the nose this wine is bursting with tropical fruit: pineapple dominates then gives way to delicious mango salad and gooseberry. Lots of lemon, lime, and grapefruit pith, with a hint of passionfruit. The palate is balanced with the residual sugar helping to lift the fruit and the acid structure provides brightness and refreshes the palate from this medium bodied Sauvignon Blanc.
Winemaker Notes:
100% Summerland Sauvignon Blanc picked late September. Fruit was from two vineyards, so we fermented them separately with different yeasts to give us some blending options later. Fruit was de-stemmed and crushed and soaked on skins for 2 hours under C02 in the press before gently pressing off skins into stainless tanks.
Lees stirring in the stainless tanks was performed once daily during ferment to build complexity and body. Fermentation temperatures kept low to preserve the delicate aromatics of Sauvignon Blanc.
Food Pairing Notes:
So many great pairings with this beautiful wine. Think fresh and crisp! Garden salad with in season fruit with a tangy vinaigrette, grilled chicken marinated with fresh herbs, and Pad Thai. For cheese pairings a creamy goat, or feta would be very complementary.

No malolactic fermentation took place – wine was blended before Christmas 2021 and then left to age in stainless for 6 months before bottling
