Tasting Notes:
On the nose, you will find aromas of red current, ripe cherry and cinnamon. In this full bodied wine you will experience a very round mouth-feel and tannin structure with hints of black pepper, cedar and dark chocolate notes on the finish.
Winemaker Notes:
90% Cabernet Sauvignon from the Similkameen and Okanagan Valley, 10% Merlot from the Okanagan Valley, both picked at optimum ripeness levels & fermented separately to feature the unique attributes of each grape. This wine aged 12 months in oak barrels with 75% French and 25% American. Naturally occurring oxygenation of this wine over time aids in ideal tannin development as well as locking in the beautiful colour. We blended in 10% Merlot to add some weight to the Cabernet as typically Similkameen Cabernets show lots of spicier characteristics.
In processing we crushed and destemmed the grapes, then left them to cold soak for a day before fermentation was initiated. We chose yeasts that drive fruit characteristics and did cap management up to twice daily or as needed to monitor the ferments to make sure they did not get too hot.
Food Pairing Notes:
The food pairing possibilities with this beautiful wine are endless. Braised beef short rib pasta, roasted lamb chops, elk tenderloin, or a marinated portobello mushroom cap with grilled asparagus.
