Winemaking Notes: 100% Chardonnay from Summerland BC. We source Chardonnay from 2 of our Estate Vineyards in Summerland. Each parcel is processed separately, and with our Chardonnay, we crush and destem the fruit and allow the must to sit under C02 for about an hour before we gently press off skins. The Juice is racked and we use select yeast to bring out the tropical fruit, and apple blossom that are so characteristic of our Chardonnays. The wine is fermented in stainless steel tanks which helps to retain crisp fruit aromas and flavours.
Tasting Notes: This beautiful Chardonnay has a very balanced acidic backbone with a wonderful minerality. Although this wine does not see any oak it is still very complex. The nose boasts of cantaloupe and papaya with a touch of flint, while the palate is driven by lemon, pear and river stone on the finish.
Food Pairings: This unoaked chardonnay pairs well with more delicate food such as crab legs & prawns. Lighter pasta dishes & even vegetable soup would pair well. When pairing cheese, think goat cheese, camembert, & even nuttier cheese like Fontina.
