Tasting Notes:
This wine has aromas of light vanilla wafer, lemon curd, lime zest, apple blossom, and pie crust. On the palate the acidity carries the fruit throughout, providing a strong backbone for the subtle oak characteristics. The body frames the structure providing a bright, yet full Chardonnay.
Winemaker Notes:
This Chardonnay was picked late September from both of our Estate vineyards. The fruit was separated into two parcels – one was direct pressed into 2 x 500L puncheons, while the other was destemmed and crushed into stainless steel. The stainless portion was fermented at 18 degrees to preserve aromatics, and the puncheons were inoculated with a different strain of yeast to build complexity in the final blend.
Barrel stirring was done twice a day during ferment, and once nearly dry, the two Blends were combined to make a 2000L batch in stainless. Partial malolactic fermentation took place, leaving the wine with bright acidity, linear fruit, and well-rounded mouthfeel. The Wine was aged on lees in stainless for 5 months before being racked and bottled. This wine represents the cool mountain climate and vineyards of Dirty Laundry, and our fresh approach to Summerland Chardonnay.
Food Pairing Notes:
Fresh Seafood pasta in a white wine cream sauce, mushroom rissotto, herb encrusted halibut, and roast chicken dinner will all pair very well. A great cheese pairing would be Camembert with grainy mustard.
