Winemaking Notes: We pick this Gewurztraminer in several pickings over the course of October, and all of the fruit comes from our Summerland vineyards. The reason for this is to help balance the various levels of acidity throughout the vineyards. Half of the fruit is soaked on the skins in cold temperatures for 2 days and then pressed off into stainless steel where it undergoes spontaneous fermentation. The other half of the fruit was crushed, destemmed & pressed directly into the tank where it cold settled. Fermentation temperatures were kept cool to preserve varietal characteristics & aromatics. The final product was carefully blended while keeping some residual sweetness.
Tasting Notes: The nose boasts of rose petal & other floral notes. On the palate you will find bright acidity with notes of tropical fruit, honey & candied mango with a touch of sweetness on the finish.
Food Pairing: Pad Thai, pumpkin gnocchi with a brown butter sage sauce, or even spicy chicken wings. Spicy dishes will be a great match with this wine! For cheese pairing, try a stilton or aged gouda.
