    PROFILE

    Tasting Notes:

    On the nose, you’ll find aromas of red cherry, vanilla & clove, a subtle hint of cedar & maraschino cherry as well. You will experience beautiful integrated flavours of pomegranate juice, cranberry & raspberry coulis when it first hits your palate; then hints of savory barrel spice & some herbaceous floral notes on the finish – think violet and sage.


    Winemaker Notes:

    With this year’s vintage of Pinot Noir we did minimal amounts of cap management as we wanted to gently extract tannin, colour, & flavour from the delicate Summerland fruit. This means we turn the cap with forced air rather than doing punchdowns. Juice was pressed off skins after 2 weeks of initial fermentation. We aged this Pinot Noir for 13 months in French Oak, 25% new oak.


    Food Pairing Notes:

    This style of Pinot Noir can hold up to some bigger flavours. Try this wine with mushroom pizza, spaghetti Bolognese, even seared duck breast. Medium flavored cheeses like manchego & gruyere will pair very well.
