Tasting Notes:
In this medium/full-bodied blend, you will find aromas of brandied cherries, fig, black cheery, clove and a hint of green pepper. This juicy palate is full of flavours of Saskatoon berry, raspberry, cedar, star anise and sour cherry. You will find this wine very approachable with a beautiful spice note on the finish.
Winemaker Notes:
Making the Bordello takes time and detail! Keeping an eye on individual Merlot, Cabernet Sauvignon, and other red barrels, allows us to track the highest quality wine as it spends 2 years maturing in a blend of French and American oak. Once it is time to blend the newest vintage of Bordello, our winemakers pull out the best barrels of each lot, blend them in tank and rack off lees, then put the blend back in barrels for another year. The
result is a smooth, velvety representation of the best the Okanagan can deliver in terms of high quality, Bordeaux-style red wine.
Food Pairing Notes:
An aged rib eye with creamy mashed potatoes, grilled bison
tenderloin and even a nice herb crusted rack of lamb. Earthier
vegetables including roasted squash or eggplant with wild rice or
black lentils. Aged farmhouse style cheeses, or any smoked cheeses
would stand up to the bold flavours.

Keeping an eye on individual Merlot, Cabernet Sauvignon & other red barrels allows us to track the highest quality wine as it spends 2 years maturing in a blend of French & American oak. This blend usually has Cabernet Franc as a blending wine included, however it can vary from year to year, as we focus more on highest quality barrels, rather than specific grapes. Once it is time to blend the newest vintage of Bordello, our winemaker’s pull out the best barrels of each lot, blend them in tank & rack off lees, then put the blend back in barrels for another year. The result is a smooth, velvety representation of the best the Okanagan can deliver in terms of high quality, Bordeaux style red wine.
