    PROFILE

    Tasting Notes:

    In this full bodied blend you will find aromas of cocoa, black plums & sage. The palate is round with flavors of vanilla, black liquorice & cured meats. A delightful amount of spice including peppercorn, clove & cinnamon on the finish.


    Winemaker Notes:

    Making the Bordello takes time & detail: we typically “top” our barrels 5-6 times a

    year, each time tasting a portion of the barrel lot & marking the best ones. Keeping an eye on individual Merlot, Cabernet Sauvignon & other red barrels allows us to track the highest quality wine as it spends 2 years maturing in a blend of French & American Oak. This blend usually has Cabernet Franc as a blending wine included, however it can vary from year to year; as we focus on highest quality barrels rather than specific grapes. Once it is time to blend the newest vintage of Bordello, our winemakers pull out the best barrels of each lot, blend them in tank & rack off lees, then put the blend back in barrels for another year. The result is a smooth, velvety representation of the best the Okanagan can deliver in terms of high quality, Bordeaux-style red wine.


    Food Pairing Notes:

    Aged rib eye or bison tenderloin.
